Sometimes, work can be a delightful privilege. Sitting down to a conversation with chef Peter McQuaid and enjoying the quiet before the evening rush at The Americano was one of those special moments. Open and quick to laugh but decidedly serious about his chosen profession, our conversation was wide-ranging and fun.
A prodigy who began his career early, Peter McQuaid is a rising force in American fine dining. After earning a scholarship from the nonprofit Careers through Culinary Arts Program and honing his skills under culinary luminaries such as Daniel Boulud in New York, Peter returned to the Southwest where he opened Cala in Scottsdale and led kitchens in Las Vegas. A three-time “Chopped” champion, he also competed on “Beat Bobby Flay” and “Chopped Legends.”
Last year, Peter was named executive chef of The Americano in Scottsdale, reuniting with longtime mentor Beau MacMillan to reimagine the restaurant’s Italian steakhouse menu. After enjoying our afternoon interview and his tasting menu, we can vouch for the power of his culinary imagination. Wow.
